Sodium bicarbonate is a food additive (E-500(ii)) used primarily in baking, where it reacts with other components to release CO2, which helps the dough rise, giving it flavour and volume.
Acidic compounds that induce this reaction include potassium bitartrate, also known as cream of tartar, lemon juice, yoghurt, acetic acid.
