Description

Xanthan gum is an extracellular polysaccharide produced by the bacterium Xanthomonas campestris B-1459. The physical appearance of xanthan is a cream-colored powder that dissolves in hot or cold water, producing relatively high-viscosity solutions at low concentrations. Viscosity remains high across a wide range of concentrations, and the solutions are stable over a broad range of pH, salt concentrations, and temperatures.
