Description

Agar or agar-agar is a plant-based gelatin of marine origin. It is an unbranched polysaccharide obtained from the cell walls of various species of algae from the genera Gelidium, Euchema, and Gracilaria, among others, resulting in a characteristic color depending on the species.

The word “agar” comes from the Malay agar-agar, which means jelly. It is a food additive (E-406).
