Also known as acacia gum. Gum arabic is a naturally occurring polysaccharide. It is extracted from the resin of certain varieties of Acacia. Originally from the Acacia nilotica tree or shrub. Currently it is extracted from the resin of the sub-Saharan varieties Acacia senegal and Acacia seyal as part of their healing process known as gummosis. This amber-coloured resin is normally collected by hand once dry. As an additive it is called E-414 in the food industry within the E numbers and acacia gum according to the European Union additives list).
